I’ve been a bit quiet, lately. With good reason, too. 

It’s back to school season and for me, that has meant diving into a new planning season in curriculum for my children that are educated at home. It’s going to be a fantastic year as Little Brother starts his formal education and Big Brother starts year 3. I’m completely swooned by the Charlotte Mason method of home education and have been giddy as a child as new living books arrive on our doorstep nearly everyday. Yes, I’ll be sure to share all about our new year in homeschool soon but for now, let’s talk a bit about lunch.

Yes, although we school at home, I’ve come to learn that our day’s run much smoother when I don’t have to stop in the middle of my day to prepare lunch. For me, this means making sure our lunches are pre-planned and ready to go the following day or something that can be prepared quickly. One of my favorite things to make early in the week that serves my family for a couple days is a pasta salad. Thanks to Jovial, it’s also completely nourishing to boot.

My family, we’ve never been huge on eating pasta; however, since learning about Jovial and their einkorn flour, we’ve happily been incorporating more of their pasta into our diets. Specifically because I know that Jovial’s einkorn flour has 30% more protein than regular flour, much more B Vitamins, trace minerals like iron, and 3 times less gluten.

Their fusilli einkorn pasta is my favorite for making a sweet and savory einkorn pasta salad.

It cooks just like regular pasta and it’s flavor is just what you would expect of Jovial’s einkorn flour…nutty, a bit sweet, and simply comforting.

This sweet and savory pasta salad is very simple to make. With just the right spices, extra virgin olive oil, red wine vinegar and a few garden goodies, it can be made in about 20 minutes. To add a bit of sweetness to this salad, I enjoy to add fresh fruit. I’ve been known to add blueberries, strawberries, raspberries, or as of recently fresh figs. They give it just the right amount of sweetness that contrasts beautifully with the savory spices…. and, the kids love digging for the fruit.

This sweet and savory einkorn pasta salad makes a great lunch to send with the kids to school or a great side dish to take to a picnic or potluck gathering.

Prep Time: 5 minutes

Cook Time: 15 minutes

Total Time: 20 minutes

A Sweet and Savory, Einkorn Pasta Salad

A Sweet and Savory Einkorn Pasta Salad. Perfect for school lunches, picnic, or potluck gatherings.

Ingredients:

  • 1 12oz box Jovials einkorn fusilli pasta
  • 1 green pepper, diced
  • 1 large tomato, diced
  • 1 cup fresh fruit (like berries or fresh figs), chopped
  • 1/2 cup extra virgin olive oil
  • 3 tbls red wine vinegar
  • 1 tsp garlic salt
  • 1/2 tsp onion salt
  • 1 tbls dried oregano
  • fresh fruit and feta cheese to garnish

Method:

  1. Bring a large pot of water to a boil. Add 3 tbls salt and the pasta. Cook according to package directions.
  2. Once cooked, empty the pot into a colander, and then run under cold water until cooled.
  3. Once cooled, place the pasta in a large bowl and toss together with the pepper, tomato, fresh fruit, olive oil, red wine vinegar, garlic salt, onion salt, and oregano.
  4. Garnish with fresh fruit and feta cheese.
