Peanut Butter and Jelly Muffins

Peanut Butter and Jelly Muffins

Peanut butter and jelly muffins are scrumptious and make for a healthy snack!

Ingredients:

  • 1/2 cup peanut butter
  • 1/4 cup raw honey
  • 2 tbl unsalted butter
  • 1/2 cup plain yogurt
  • 1 egg
  • 1 cup whole wheat or spelt flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp kosher / sea salt
  • Jam or jelly

Method:

  1. Preheat the oven to 350. Line a 12 cup muffin tin with paper baking cups.
  2. In a large bowl, beat the peanut putter, honey, and butter. Stir in the yogurt and egg.
  3. Add the flour, baking powder, baking soda, and salt. Stir. No need to over mix, there should be some lumps in the batter.
  4. Divide the batter among the muffin cups. Make a small hole in each muffin batter and add a spoonful of jelly.
  5. Bake 20 - 25 minutes.
  6. Store in an airtight container.

    You can soak your flour with the yogurt for 12-24 hours and eliminate the baking powder. The soak process causes the dough to rise more and helps eliminate the phytic acid to make it more digestible. Looks yummy!

    Hi there. In recipes where it calls for raw honey, is that honey a syrup or liquid versus organic raw honey that is dense in the jar? If it is dense, should I warm it until it liquifies into the needed amount? Thanks…I’m new to all of this. I must say, my boys LOVED the chewy peanut butter chocolate chip granola bars!

      No problem, Dawn. It’s all the same. When honey gets cold, it will naturally crystallize, harden. Yes, if it’s crystallized, you can warm it up by placing it in some warm water or I will often just set it by my heater. It will melt pretty quickly 😀
