At home, the kids and I are very eager for the coming warmth of spring. Creation satisfied us by giving us a good week of warmer temperatures. We took full advantage of them and headed into nature where our hearts seem to enjoy wandering the most.
The deer were at full shed which made it fun exploring the barren woods for their treasured antlers. The boys didn’t have much luck but Little Mama did.
This antler looked to have come from a full-grown stag!
My little one was beaming with joy as she carried her heavy prize like a grand trophy. She wouldn’t let it go until she proudly added it to our nature display we keep at home.
Since then the temperatures have dropped, we’ve had more snow, and are once again in anticipation of warmer days. I’m sure Robin Redbreast will make his appearance soon; as we wait, we’re being comforted indoors by a warm kitchen and wafting aromas of freshly baked goods from the oven.
Quick Bake Einkorn Biscuits
One of our favorite baked goods that is especially simple and quick to make, even on busy weekdays, is a quick bake einkorn biscuit. They’re delightfully buttery, flaky, with some good ol’ traditional tang by the use of homemade fermented kefir.
As simple as they are to make, one thing you want to make sure to do is to not overwork the dough. I’ll explain in the instructions below how to make them but just remember, quick and simple is what these biscuits want in order to rise beautifully in the oven.
These quick bake einkorn biscuits are delightfully buttery, flaky, with some good ol' traditional tang by the use of homemade fermented kefir. They're simple enough to make even on busy weekdays.
Ingredients:
- 2 cups einkorn flour
- 1/2 tsp baking soda
- 2 tsp baking powder
- 1 stick cold butter, roughly chopped
- 2/3 cup milk kefir sub buttermilk
- 2 tbsp melted butter
Method:
- Preheat oven to 450°F.
- In a food processor, pulse together the flour, baking soda, and baking powder until mixed through.
- Add the butter and pulse 6 to 10 times until the mixture resembles a course grain.
- Add the kefir and continue to pulse until the mixture just begins to hold together. It will still be very loose.
- Empty the contents of the container onto a floured working surface and, using your hands, quickly gather the mixture together until it just holds together.
- Quickly, roll it out into into a 6" x 8" rectangle and then fold the top over 1/3 of the way down and the bottom over 1/3 of the way up, like folding a letter.
- Flip it around and roll it out once more into a rectangle, 3/4" thick, and using a round cookie cutter or biscuit cutter, cut out rounds, setting them aside on a parchment lined baking sheet.
- Once all the biscuits have been cut up, gather up the scraps with your hands pressing into another solid form to cut out the remaining rounds. Don't overwork the scraps or you'll end up with dense biscuits.
- Bake at 450°F for 12-15 minutes or until the tops and bottoms just begin to turn golden.
- Once out of the oven, brush the tops with melted butter.
- In a medium-sized mixing bowl, mix together the flour, baking soda, and baking powder.
- Add the butter and cut into the flour with your fingers until the mixture resembles a course grain.
- Mix in the kefir with a wooden spoon and using your hands, quickly gather the mixture together until it just holds together.
- Quickly, roll it out into into a 6" x 8" rectangle and then fold the top over 1/3 of the way down and the bottom over 1/3 of the way up, like folding a letter.
- Flip it around and roll it out once more into a rectangle, 3/4" thick, and using a round cookie cutter or biscuit cutter, cut out rounds, setting them aside on a parchment lined baking sheet.
