Today is the end of Week 2 and my week definitely didn’t go as planned! As far as exercising, only 1 day this week! I’m disappointed that I only made it to Goals In Motion once this week, however, I had a deadline on a project that had to be met. Being that I am at home with the kids during the week that meant a couple of late nights and no way was I going to drag myself up with only a few hours of sleep. We also had a terrible ice storm this week that prevented me from getting out 🙁
However, After reading my friend Divina’s 10 in 2010 Post from Sense and Serendipity I was encouraged to not give up! So I’m not. It was a bad exercising week and one that I’ll accomplish this coming week. One of the things that I realized and want to implement next week is that if I do miss an early morning workout to pop in a video and make up for it at home. I want to get in 5 days of exercise this coming week!
On the upside, I’ve been concentrating on my lunches. I’ve been trying to eat more protein and healthy fats for a nourishing and filling lunch. So I’m happy to say that I’ve been making some super yummy salads topped with fried cod in panko bread crumbs and coconut, sardines in olive oil, and yesterday I topped my salad with falafel drizzled with EVOO and balsamic vinaigrette. It’s been leaving me super satisfied and feeling great! I’m really trying to cut down on my grains so I’d like to keep this up into the coming week as well.
On a side note, I was able to accomplish a goal of mine!!! I finally made a delicious loaf of homemade sandwich bread!!
It did take me awhile and I feel it’s because I was using inactive yeast and cold flour. After changing to Red Star Active Dry Yeast and grinding my own wheat berries, I’ve been able to make delicious pizza crusts and a sandwich loaf!! I’m just thrilled and am excited to really start digging into Artisan style bread! Can’t wait!
As far as my spiritual goals, I’ve been spending extra time with my son Nehemiah reading his bible and other books. It’s so much fun seeing how much he really understands. He’s really an amazing boy and just loves to learn new things. I’m so proud of him and the Lord has really been showing me how important it is to spend that time with him, one on one. What I need to spend more time on is my one on one time with God. It’s so easy to get caught up in this world and lose sight of who is in control. With everything that has happened in Haiti and all of those innocent people that have lost mothers, fathers, sisters, and daughters it really opens my eyes to what is happening in this world and grasp what is truly important. My relationship with Christ, my family and friends. Of course, my blogging friends are included 🙂 I always thank God for opening up this outlet of blogging to get to know so many of us that are really in the same place. Searching… searching for something better, something more significant, at the end… it can only come from one place. Christ! Okay, I’m totally talking to myself here, lol!! Keep going! You're doing a GREAT job! Everyone gets busy, overwhelmed and you're doing very well juggling it all. The bread looks wonderful! I started grinding my own wheat, brown rice, nuts and even quinoa last year. Isn't it wonderful to make things from scratch?

I still congratulate you for doing a great job in other areas. Glad to be a good influence in your life. When it comes to spending time with God, this is the priority that I need to work on. He should come first before anything else. Great looking bread. I want to bake some bread again soon.

We got hit by that ice storm up here in Minneapolis, too. Made it tough to get out (and get home). It's such a challenge staying motivated in the winter; glad we can rely on each other to stay focused.

Have you ever tried seven grain flour? I have only tried bread once and it didn't rise well.
