Raw Cabbage and Apple Salad in an Apple Cider Vinaigrette

It feels great to have a bit of free time to document simple, easy and nourishing recipes that you can fit into your week.  With cabbage and apples in abundance during the Fall and Winter seasons, a cabbage salad is easy to make and allows for variety apart from a normal green salad.  Including cabbage into your diet during the colder months will help increase your immunity as it’s loaded with Vitamin K and Vitamin C among other vitamins and nutrients.


Raw Cabbage and Apple Salad in an Apple Cider Vinaigrette

Ingredients:

  • 5 cups chopped green cabbage
  • 2 carrot sticks, shredded
  • 1/2 red onion, diced
  • 1 organic fuji apple, diced
  • 1/4 cup extra virgin olive oil
  • 4-5 tbls raw apple cider vinegar
  • 2 tbs real maple syrup
  • salt and pepper to taste

Method:

Toss all ingredients together and chill.  Keep refrigerated for at least one hour before serving to infuse the flavors.

      It's always great getting new ideas. I have made something similar with an apple cider vinegar dressing, but never with the chopped up apple. Thanks for the inspiration.
