One thing I’ve learned about hosting Holiday meals is that people either love or hate sweet potatoes.
I fall into the love camp; however, I’m not fond of the traditional sweet potatoes layered with sugar and marshmallows.
Instead, I prefer to actually taste the sweet potato. Soft and silky with a hint of Earthiness.
This recipe lets the sweet potato shine and is brightened up with fresh cranberries that adds a bit of tartness.
If you’ve never cooked with fresh cranberries before, don’t eat them raw. Wowza! They’ll make you jump back with bitterness.
Once the cranberries are cooked down, however; and allowed to simmer in pure maple syrup, they brighten up and compliment the sweet potatoes well.

Ingredients:
- 6 medium sized sweet potatoes
- 1 1/2 cups organic cranberries
- 1 cup pure maple syrup
- 3 tablespoons butter
- 1/2 tsp cinnamon (optional)
Method:
- Bring a large pot of water to a boil. Add the sweet potatoes, reduce the heat to low, and simmer covered for 25-30 minutes or until the sweet potatoes are fork-tender. Remove the sweet potatoes from the water, set aside, and allow to cool.
- While the sweet potatoes are boiling, add the maple syrup to a saucepan. Bring to a boil, lower the heat and simmer for 10-15 minutes
- Add the butter, cranberries, optional cinnamon, 1/2 tsp salt and cook just until you hear the cranberries start to "pop."
- Once the sweet potatoes have cooled, slice about 1/2" thick and layer in a baking dish. Spoon the maple cranberry syrup over the sweet potatoes and bake at 375F for 25 minutes.
- To really jazz these up, you can even add walnuts!
