Monday’s with Mami – Garbanzo’s and Chorizo Sausage in Autumn Flavours

chorizo-garbanzos
Now… onto Monday’s with Mami!  I had to use the cazuela’s again, just to show how beautiful and versatile they are!  I love cooking in them!  This recipe uses traditional Spanish chorizo, garbanzos, and is infused with the flavours of cinnamon and cloves.  A warming and comforting side dish perfect for a beautiful Autumn evening.
Garbanzo’s and Chorizo Sausage in Autumn Flavours
Ingredients:
  • 3/4 cup garbanzo’s soaked overnight
  • 1 bay leaf
  • 1 tsp ground cloves
  • 1 cinnamon stick
  • 4 cups homemade chicken stock
  • 2 tbls Extra Virgin Olive Oil
  • 1 onion, chopped
  • 2 cloves garlic, minced or pressed
  • pinch of dried thyme
  • 1 package of 4 small links Chorizo by Palacios

Method:

  1. Put the garbanzos in a large bowl, cover will with water and soak overnight.
  2. Right before cooking, drain the garbanzos.  In a large cazuela, saucepan, or pot, add the garbanzos, bay leaf, ground cloves, cinnamon stick, and chicken stock.
  3. Cover with water, about an inch above the beans. Bring to a boil, reduce heat, and simmer for 1 hour or until the garbanzos are tender.
  4. There should just be a little liquid left in the pot.  Drain and remove the bay leaf and cinnamon stick.
  5. In a different saucepan, heat the oil.  Add the onion and cook over medium heat until the onions are transparent.  Add the garlic, thyme and cook, stirring, for 1 minute.
  6. Increase the heat to medium-high, add the chorizo sausage and cook for 3 minutes.
  7. Add the garbanzos to the frying pan, mix well, then stir over medium heat until they are heated through.   Remove from the heat.  Add salt and pepper to taste.

    I've had a dish nearly identical to this when I was in Alcoy, Spain a couple of years ago. It was AMAZING. Thanks so much for posting this – I *will* be making this! πŸ™‚

    Now… what I want to know is if you have any insider tips on how to make those wonderful empanadas that I buy in the bakeries in the Alicante and Valencia regions of Spain. My fave has – I think – cream cheese and carmelized onions. But I've had tomato and spinach, sausage and tomato, ham and cheese of some sort… I love those things! And I think they'd be great to see if my kids would like them!

    Lisa – Thanks for stopping by!! When buying chorizo, make sure you're buying Spanish chorizo and not Mexican. 2 completely different types! Spanish Chorizo is dry cured where Mexican chorizo is raw and needs to be cooked.
