Arroz Con Leche – Rice Pudding

Arroz con leche, creamy and wholesome!  This rice pudding has flavors more typical to Spain using fresh whole milk, cinnamon, and lemon peel.  For an extra creamy texture, cream and eggs.  For this version, I also used soaked brown jasmine rice.  Delicious and Nutritious.

Arroz Con Leche – Rice Pudding

Ingredients:

  • 1 cup brown rice like jasmine or basmati (white rice will do just fine)
  • 1/2 gallon (fresh) whole milk
  • 1/2 cup raw honey
  • 2 cinnamon sticks
  • 1/2 cup cream
  • 3 eggs
  • lemon rind of one lemon
  • 1/4 teaspoon sea salt
  • ground cinnamon to taste

Method:

If using white rice, skip steps 1 and 2

  1. The night before soak the cup of brown rice in 1 quart of water adding 3-4 tablespoons of an acid medium such as whey, lemon juice, yogurt or kefir. I soaked the rice for 24 hours.
  2. The next day drain the rice and rinse in cold water.
  3. In a large pot, add the rice, 1/2 gallon of milk, raw honey, and 2 cinnamon sticks.  Bring to a simmer and cover for an hour stirring every 5 – 8 minutes so the rice doesn’t stick to the bottom of the pan.
  4. Simmer until the rice is tender.
  5. In a small bowl, mix together the cream, eggs, lemon peel, and salt.  Add to the pot and stir for an additional 5 minutes or so.
  6. Remove the cinnamon sticks and pour the contents of the pan into a dish to cool.
  7. Once cooled down place in the refrigerator overnight.  The rice pudding should be super creamy and thick.
  8. Top with ground cinnamon.

You can either eat the pudding warm as soon as it’s done or eat it cold the next day 😀

    I so love Rice Pudding (childhood comfort food). The pudding in your photo looks like the perfect consistency and I can almost taste it with the cinnamon sprinkled on it. Beautiful photo – thx for sharing!

    Oh my goodness, I just about fell of my chair when I saw your picture. What a wonderful treat this rice pudding is- I usually make some of this over the holidays and didn't get to it. Yours just looks divine!

    How Bizarre. I was going to post the recipe for Portuguese Rice Pudding today which is the Portuguese version of this lovely dessert. Glad I popped by first. This looks amazing. I will have to cook something else now lol

    Ooooh, yum! I always think that brown rice wouldn't work in rice pudding, but I suppose if you soaked it, it'll turn into a pudding too! This sounds delicious.

    Wow, I think I could eat the whole milk and raw honey and be a happy camper. I would never eat this dish cold, becuase it would never last that long!

    Hi Diana! My mom uses to make Arroz con leche in her kitchen robot and it is so ridiculousluy easy we all love it. Although we only put milk and sugar, no other fats added. One variation very common in Asturias, the northern Spanish region where they come from, is to add a little bit of "Anís liqueur", like Ouzzo or Pastis, which adds a subtle flavour that is great (hay,m and apt for kids as weel, alcohol evaporates!).

    When I was growing up, one of my favorite snacks was an Indian/Trinidadian version of rice pudding. Your post just made me crave it now. I must try this recipe! Thanks for sharing.
