Deliciously Organic – Spinach Madeline Stuffed Pork Loin

Deliciously Organic is one of my favorite blogs to visit.   With similar food philosophies, her recipes have always inspired me in how she uses real, natural ingredients.

I met Carrie about a year ago through the blogosphere.  I’ve chatted back and forth with her through email and she has always been so kind and willing to help and encourage me in my own blog.  She’s genuine and someone I want to meet in the future.

I was excited to hear from her last year that she was in the writing and photographing stages of her very own cookbook.  How inspiring to see a fellow blogger being published. A dream for many of us.

As her cookbook went to print I was thrilled to have been sent a review copy of Deliciously Organic.  Simple Dishes, Vibrant Flavors Everyone Will Love.  When I received my copy I literally read the book from front to cover in one night.

This is the cookbook to have if you are on your venture into real, wholesome organic food.

For many people the path that leads to eating a diet filled with real foods or organic foods as Carrie calls it, starts with sickness.  After the birth of her second daughter and with a husband, a fighter pilot, in the war in Iraq, she began having daily migraines.  Through the help of a friend she was able to learn this entire world of real, organic foods and recovered from her daily migraines.  As I write about so often on my blog, it’s food that nourishes our body and gives us strong and vibrant health.

As one starts to learn about real organic foods, the road can be intimidating, costly and scary.  There are so many blogs that speak on real foods that it can seem so overwhelming.

Carrie’s book, Deliciously Organic, brings real food mainstream.

She introduces to you in simple terms all of the essential ingredients of a real, organic kitchen.  It’s written so well and simple that anyone can make the change!

She introduces…

  • Natural Sugars
  • Oils and Fats
  • Whole grains including the soaking method
  • Milk and Cheese
  • Meats
  • Spices and Condiments

What’s great is that after she explains key ingredients to an organic kitchen the book is filled with beautiful recipes with photos for breakfast, lunch and dinner.

Living a diet filled in real food couldn’t be any easier!  For anyone that has a hard time cooking, this is a great book as the recipes are easy to follow.

For all of you Nourishing Traditions and Weston Price Followers, Carrie includes the soaking method in many of her recipes.

For this post I wanted to share one of her recipes. As I read through her book, I immediately stopped at Spinach Madeline.

Me and greens… well, I love them! When I saw the ingredients, spinach, whole milk, cream, cheese, yeah… there was no stopping me.  And the photo was gorgeous!  Did I mention Tartelette did the photography!!  It’s gorgeous!

So I started with my ingredients.  Instead of spinach I used beet tops that I had frozen from last years harvest.

Also, the recipe calls for pepper jack cheese, however, I used an Iberico sheeps cheese from Spain.  Delightfully creamy and mild.

For anyone that loves greens, this was a beautiful recipe.  Creamy and savory.

I could have stopped here, however, my intentions for this recipe was to use it as a filing in a pork loin.

A delicious heritage breed berkshire pork loin from Stamps Family Farm.  I’ll soon post on how to cut a pork loin in order to fill it.  It’s super easy and makes for a beautiful presentation.

The flavors worked beautifully together and this dish would make a perfect main dish for an Easter gathering.  Spring greens and pork.  Something to look forward to!
