There was a time in my life that baking cakes was my hobby. Not just baking them, but decorating them as well. I took a series of Wilton classes at my local Hobby Lobby store and fell in love with the creativity of putting together bright fun birthday cakes or large tiered ones with classical whimsy.

The more cakes that I started to bake and decorate, soon enough, more and more people started asking me to make them for their special celebrations.

I was delighted to bake this elegant 4 tiered cake for my best friends wedding.

Some of my favorite cakes to bake and decorate are those that are meant to look a bit messy and naked like this one I made for my sweet daughters first birthday.

Baking and decorating cakes is really not too difficult once you learn some of the essential techniques. For me, I found those techniques through weeks and weeks of classes. He learned baking and pastry arts at Johnson & Wales University, but his elegant and detailed cake designs are all his own. A finalist in Last Cake Standing, he has appeared on the Food Network Challenge 15 times, showing the world cake artistry that is by turns ornate, over-the-top and seriously cool.

In this free Craftsy mini-class, Joshua shares a fresh take on classic buttercream skills to make your cakes look as wonderful as they taste. If you are a brand new decorator, Joshua will teach you how to cut, level, fill and crumb coat your cake layers like a professional. Then learn his trade secrets for a smooth or textured buttercream finish and add simple accents with gum paste and piping gel.
