Honey Sweetened, Chai Spiced Shortbread Cookies

In this season, my counters seem to blanket a constant thin coating of flour as I prepare many of my honey sweetened goodies that my children look forward to each year. Polvorones, buñuelos de viento, almond orange shortbread cookies, spritz cookies, buttered sugar cookies, Spanish turron, kringla, salted honey caramels, gingerbread, and eggnog.

One of my favorite cookies that pairs beautifully with a warm cup of coffee or tea are buttered shortbread cookies. I prefer them plain, lightly sweetened, so that the rich buttery flavor shines through every soft crunchy bite.

Honey Sweetened, Chai Spiced Shortbread Cookies

This year; however, I wanted to add a little spice to my shortbread. I decided spice them up using a packet of Peppercorn Chai by RawSpiceBar.

This spice really added the kick I was looking for. The peppercorn shines through most bites. To compliment the flavors of the chai, I dipped each star in dark chocolate and sprinkled it with a bit of himalayan sea salt.

Honey Sweetened Chai Shortbread Cookies

Honey Sweetened, Chai Spiced Shortbread Cookies

Yield: Makes about 50-60 small cookies.

Honey Sweetened, Chai Spiced Shortbread Cookies

Honey Sweetened, Chai Spiced Shortbread Cookies. A spiced up treat for the holidays!

Ingredients:

  • 3 sticks unsalted butter at room temperature
  • 1/2 cup honey
  • 1 tsp pure vanilla extract
  • 4 cups sprouted einkorn flour (sub 3 1/2 cups all purpose flour)
  • 1 packet peppercorn chai spices by RawSpiceBar (sub 1 tbls chai spices)
  • 1/2 tsp salt
  • 6 ounces dark chocolate
  • himalayan sea salt (sub course salt)

Method:

  1. Preheat the oven to 350F
  2. In the bowl of an electric stand mixer, fitted with a paddle attachment, mix together the butter and honey until combined, 1-2 minutes. Add the vanilla.
  3. In a bowl, mix together the flour, chai spices, and salt.
  4. With the stand mixer running on a low speed, add the flour mixture, 1/2 cup at a time until just combined.
  5. Once combined, dump the cookie mixture onto a lightly floured surface. Bring together with your hands and shape it into a disc. Wrap it in plastic wrap and chill in the refrigerator for 30 minutes.
  6. Once chilled, rolled the dough onto a lightly floured surface 1/2" thick. Using a cookie cutter of your choice, cut the cookies out of the dough, place on a parchment lined cookie sheet, and bake for 20-25 minutes or until the edges just begin to brown. Repeat until all cookies have been, baked, and cooled completely.
  7. Once the cookies are cooled, in a small saucepan, melt the chocolate. Dip each cookie half in the chocolate, sprinkle with himalayan sea salt, and allow to cool and harden on a parchment lined cooling rack or baking sheet.
