Lentils with Spanish Chorizo Sausage

Lentils with Spanish chorizo sausage. This has to be one of my favorite comfort foods. This is a recipe that I have grown up with and could eat every day if I had to. It's a simple recipe that my children enjoy. Chorizo Sausage and Pimenton are two staple Spanish ingredients in this recipe. Chorizo is a dry/cured sausage that is found in every local bar and household in Spain. The taste is amazing. In Spain, they sell different varieties of Chorizo. Some that can be cut into thin slices ... continue reading...

La Feria de Sevilla

Every year when April and May roll around, I can't help but wish I was in Spain. My favorite time of the year to be in Spain is during La Feria de Sevilla or San Lucar. When I do, it may change my opinion :) In Sevilla the fair is a week long celebration filled with flamenco dancing, eating, and drinking rebujitos. Within the fair, casetas (tents) line the streets and are filled with people in celebration. Each caseta is owned ... continue reading...

Homemade Mayonnaise

Any Spaniard knows that Mayonnaise doesn't come in a jar. It's made from olive oil, eggs, salt and lemon juice. It's so easy to make and has a distinct flavor all of its own. My Abuela Rora has it down to perfection; however, she's been making it for years. She uses a hand blender and literally throws in the ingredients. I've found it much easier to use a blender and use precise measurements to ensure an edible final result. In Spain no one is really down with the sandwich and pan bimbo (sliced ... continue reading...

Our Journey to a Successful VBAC

With the coming birthday of my second son, Ezekiel, I thought I would share his birth story and all that we went through to achieve our VBAC. Below is a short video of Gabe's and my journey to a VBAC followed by a written version in more depth. If you chose to read, be aware that it is long. I couldn't help it. This part of our lives tested our faith and proved to us how much God is in control. Direct link to my video on youtube. Our Journey to a VBAC It’s been a year since I’ve had my ... continue reading...

Seedling Update!

It has already been over a month that I planted my seedlings under shop lights in my basement. Heirloom tomatoes, peppers, and eggplants. The peppers and eggplants have done great. They've actually been pretty easy. I water them every other week with fish emulsion and they've been slowly but steadily growing. My tomatoes, on the other hand, have been the greatest challenge for me. My basement gets cold, so I found out real quickly that tomatoes need warmth. They are also very sensitive to ... continue reading...
